Asiago cheese products: a traditional hard Italian cheese

Asiago is a cows' milk cheese, produced on the asiago plateau in the Veneto region. This hard Italian cheese dates back more than one thousand years. Asiago is a traditional Italian cheese with two versions: “Asiago d’allevo” (or aged Asiago) matured from three months to two years and “Asiago pressato” (or young Asiago) aged a month and which has a higher fat content. The aged Asiago is full-flavored, sharp and pungent, but, when young, it is milder and with a slightly sweet and milky flavor. Based to its age, Asiago can be used for grating or slicing in salads, sandwiches and soups, but it is excellent also with different kinds of pasta.
