This soft or semi-hard cheese has many varieties with DOP (PDO) status and we can distinguish two general versions: one made with whole milk and the other with partially skimmed milk. This traditional Italian cheese can be grilled or melted, used in different kind of recipes and it is excellent when served with honey, fruits, jam or Balsamic vinegar.
