MASCARPONE CHEESE: THE TRIPLE-CREAM ITALIAN CHEESE
Mascarpone is a triple-cream cheese, soft and mild in taste and produced from unskimmed cows' milk. Traditionally, Mascarpone was produced only during the winter season, but today it is a product available all year round. Mascarpone is not a true cheese, because it is without rennet and in fact, it's perfect also for vegetarian cuisine. It is creamy in texture, consistent and white - pale yellow in color. Very mild and high in fat, mascarpone is often used in many cream bases and it is the main ingredient for the famous Italian dessert, tiramisu.
