Ricotta is a fine fresh cheese made from sheep’s', cows' or goats' milk. Its name literally translates as "re-cooked". Ricotta is a low-in-fat cheese and high in proteins, its delicate consistency and clean flavors make it perfect to different recipes. In fact, ricotta is a popular ingredient in many Italian dishes like pasta, cheesecake or as filling for fresh pasta like classic ravioli. There are three main distinct varieties of ricotta: salty goats' milk ricotta, salty cows' ricotta and sweet sheep's ricotta. The salty one is white in color, with firm texture and salty taste which makes it perfect for salads or in slices and for grating. On the other hand, the sweet ricotta is mainly used as a component for many Italian desserts, especially mixed with chocolate.
