The cheese is made from pasteurized cows' milk or from a mixture of cows' and sheep's milk. It has a characteristic pear shape and the process of ripening the cheese has given Scamorza its name, which in Italian means ‘beheaded’. The fresh version is ivory white, with a smooth texture and a delicious sweet and fresh taste. On the other hand, the smoked version is golden-brown and with a more intensive and definite flavor. Scamorza is a kind of cheese appreciated both on its own and as an ingredient in preparing savory recipes.
