Ubriaco, or "drunken cheese", is a typical Italian cheese made in Northern Italy. Ubriaco named after its process, it is bathed in gallons of dry and sparkling wine to obtain a unique sweet, delicate wine aroma and its complex flavors. It is cows' milk cheese, matured for 2 months, but sometimes for over a year, with a firm and crumbly texture. Ubriaco cheese has a flowery and spicy aroma, because of the wine marc, and it is perfect for appetizing antipastos, but it’s excellent also on its own or as an ingredient for different dishes.
