Bra DOP cheese, named after the town of Bra in the Piedmont region, is a firm cheese, made from a mix of cow, goat and sheep milk. Today this Italian cheese is made in different regions, but the most authentic Bra DOP cheese is produced only within the province of Cuneo. Bra DOP cheese has three varieties: the younger, tender and soft version (Bra Tenero); the aged and harder version (Bra Duro) and “Bra d’alpeggio” (or Bra from Alps) made only from cows that graze on the mountain from June to October. The young Bra DOP cheese is mild, slightly spicy and milky, on the otherwise the aged Bra cheese is more pungent and full flavored.
