The authentic Italian Fontina Valle d'Aosta DOP, dating back to 13th century, is traditionally made form unpasteurized milk of the Valdaostan cow grazing on the plains of the Aosta valley. This Italian cheese has a natural thin rind, ranging from yellow to brown, with a pale golden interior with small "eyes". Its texture can vary from semi soft to firm, it’s very rich and creamy and it gets nuttier with aging. Italian Fontina Valle d'Aosta DOP is a very versatile cheese: it can be cook to make a delicious fondue or to prepare many other typical Italian dishes.
