Italian speck is an historical cured meat that has existed on Italian tables since the 13th century, maybe with different names and definitions. Its preservation technique is an ancient method used in the past to preserve the meat throughout the entire year and it was the only way to eat meat for the poorer people. Today, it represent one of the most important ingredient used for parties and special meals. Italian speck is made from the mix of two preservation methods: aged and smoked techniques, which give origin to the famous speck rules of "a little bit of salt, a little bit of smoke and a lot of fresh air".
