Gorgonzola DOP cheese is one of the oldest Italian cheeses and it has become famous for its particular flavor and its distinctive blue-green veins. Gorgonzola DOP cheese is produced in the northern Italian regions of Piedmont and Lombardy, but due to its crumbly and soft texture and its nutty aroma it is appreciated in kitchens and restaurants worldwide. Italian Gorgonzola can be two versions, which vary in its aging: the younger version is creamier, lighter in color and sweet in taste; the mature version is firmer and crumbly, with veins that are more prominent and with a spicy flavor. This ancient Italian cheese can be consumed in many ways, but it is excellent also simply with a red wine or in paired with fruits, walnuts, raw vegetables, chestnut, honey and so on.
